Crock Pot Sausage & Cheese Tortellini

A few days ago a popular link going around Facebook was 25 of the Best Crockpot Recipes.  I picked out a few and decided to make this one tonight.  Everyone enjoyed it and we'll be making it again.  I'll list the original recipe taken from Recipe Mothers below but I think I'd tweak a few things.  I'll list those below the original instructions.
  • Slow cooker
  • 1 package of chicken broth (32 oz)
  • 1 package of your favorite tortellini (20 oz, we used three cheese)
  • 1 lb spicy (hot) Italian sausage
  • 2 Cans Diced Tomatoes (seasoned with basil, garlic & oregano)
  • 8 oz. Cream Cheese
  • Grated Parmesan Cheese for toppings
  1. Take your cream cheese out of the fridge, and let it sit while you quickly brown your meat.
  2. Add the sausage and tortellini to your Crock Pot. Pour the tomatoes, liquid and all, and broth over the top. Add your cream cheese to the Pot in chunks.
  3. Give your Crock Pot a good stir to get everything evenly distributed, making sure the liquids are adequately covering the tortellini.
  4. Cook on LOW for a total of 4 1/2 hours. Stir at 2 hours, and again at 4 hours, removing the lid for the last 30 minutes of cooking. This will give the sauce some time to thicken up.
Possible modifications:
  1. Switch from hot Italian sausage to mild. (I like spicy but there was a definite kick and might have been a bit too spicy for the kids.  But they all cleaned their bowls.
  2. They never called this a soup recipe but I think it might be good to have a bit more liquid. Think I'll try adding another package of chicken broth.  (I'm no Martha Stewart so there might be a better option.)
